The temperature dropped to -4.1 degrees Celsius - recorded at the Kempsey Aiport, according to the Bureau of Meteorology, which is a massive 5.1 degrees Celsius lower than the previous lowest recorded temperature for May.
Local Nathan Warwick, who has lived in West Kempsey for the past 14 years, has never experienced a morning in the region quite that cold.
Mr Warwick ventured outside in the morning and noticed the water in his bird bath had frozen solid.
"I have never seen the water freeze or this much ice at any time of the year," Mr Warwick said.
The cold mornings are expected to continue with winter officially arriving tomorrow, Saturday June 1.
